Showcase Class

Chef Paco Cardenas brings to life the foods, the flavors, and the 
stories of Mexico as he teaches a class showcasing the traditional 
flavors of regional Mexican cooking. Cardenas has been chef/
owner of Petit Four, a small pastry shop and cafe in the historic 
and charming Mexican town of San Miguel de Allende, since 
1998. He teaches Mexican cooking classes in his café as well as 
hands-on private cooking classes in his home. He was born in 
Mexico City and learned how to cook in the traditional kitchens 
of his grandmothers and great aunts. In 1994, Cardenas received 
a degree in Graphic Design, and worked as a designer in the 

National Anthropology Museum in Mexico City for two years. Following his passion for artistry, 
he shifted careers and took an apprenticeship in the pastry shop of the JW Marriott Hotel in 
Mexico City, where he spent two years learning all he could about the art of pastry making. El 
Petit Four was named “Best Café” by Bon Appétit magazine in 2003. He has been featured in 
Travel & Leisure, Coast, and Better Homes and Gardens magazines. He recently collaborated on 
a project with Mexican cooking doyenne Diana Kennedy. He presented a cooking demonstration 
of Guanajuato traditional regional food at the CIA (Culinary Institute of America) in San Antonio, 
Texas, and taught a private class at the home of Mary Risley, owner of the famed Tante Marie 
Cooking School in San Francisco.  Paco shows students how to create the perfect fiesta anytime 
with delicious, authentic recipes as he introduces a variety of Mexican ingredients and cooking 
techniques. We welcome Chef Cardenas back to Ocean Reef Club.
