For well over a decade, New Orleans chef Tory McPhail 
has helmed the kitchen at legendary dining institution 
Commander's Palace, a restaurant which has catapulted 
chefs such as Paul Prudhomme, Emeril Lagasse and Jamie Shannon into renown over its more 
than a century in operation. And McPhail's relationship with the Brennan family, who own and 
operate the restaurant, goes back even further to when he was 19 years old and Shannon hired 
him right out of culinary school. In 2013, McPhail added another accolade to the many that 
Commander's Palace has racked up over the years: a James Beard Award for Best Chef: South. 
Under his leadership, Southern Living named Commander's the Best Splurge Restaurant in 
the South. McPhail was named one of the best chefs in the country by The Daily Meal in 2013 
and one of Saveur’s inaugural Tastemaker Chefs in 2012. He won the Great American Seafood 
CookOff in 2009, co-authored “Commander’s Wild Side”, served on the Nutrition Advisory 
Board for Cooking Light magazine, and has been a spokesperson for Wild American Shrimp 
and Old Bay seasoning. A native of Ferndale, Washington, a small agricultural town on the 
Canadian border, Tory McPhail grew up on his family's farm, eating fresh, locally sourced foods 
and building an early appreciation for their origin. After attending culinary school in Seattle, 
McPhail headed for New Orleans where he was hired by Commander’s Palace Executive Chef 
Jamie Shannon. Working diligently through all 12 stations of the kitchen, he honed his craft. 
McPhail later completed a series of stints in Florida, London, the Virgin 
Islands, and at Commander’s Palace in Las Vegas before returning to 
Commander's Palace in New Orleans. Since 2002 McPhail has hosted 
his own television show, "Off the Menu" on Turner South. He has made 
numerous television appearances including “Top Chef”, “Today”, “Early 
Show” and “Sara’s Secrets”. McPhail is featured in the documentary “Ella 
Brennan—Commanding the Table”. McPhail delights in exploring a variety 
of flavors in his seasonal menus— embracing Creole traditions while 
updating classic dishes with fresh, local ingredients.
